For the Cake

  • 1 box 16-oz. box devil’s food cake mix The backbone of your cake, ensuring a rich, chocolatey base.

For the Ganache

  • 1 cup heavy cream Adds a rich flavor to the ganache.
  • 2 cups chocolate chips Semi-sweet or dark chocolate chips are preferred.

For the Buttercream Frosting

  • 1 cup butter, softened Creates a creamy and rich frosting.
  • 5 cups confectioners’ sugar Brings sweetness and fluffiness to your frosting.
  • 1 tsp peppermint extract For a refreshing mint flavor.
  • 3 Tbsp heavy cream Ensures a smooth and creamy consistency.
  • 6 drops green gel food coloring (optional) For a festive look.

For Garnish

  • as needed Andes mints For an elegant presentation.

Preparation

  • Preheat the oven to 350°F (175°C). Grease three 9-inch round cake pans with cooking spray and line them with parchment paper.
  • Prepare the cake batter according to the package directions, mixing the cake mix with the required ingredients like eggs, water, and oil. Pour the batter evenly into the prepared pans.
  • Bake for about 15 minutes or until a toothpick inserted in the center comes out clean. Allow the cakes to cool completely on a wire rack.

Make the Ganache

  • Place 2 cups of chocolate chips in a heatproof bowl. Heat 1 cup of heavy cream over medium heat until tiny bubbles form around the edges.
  • Pour the hot cream over the chocolate and let it sit for 2 minutes. Whisk until you have a silky, smooth ganache, then set aside to cool until spreadable.

Make the Buttercream

  • In a large mixing bowl, beat the softened butter and peppermint extract until light and fluffy.
  • Gradually add in the confectioners’ sugar, beating after each addition until well combined.
  • Mix in the heavy cream and optional drops of green gel food coloring.

Assemble the Cake

  • Layer the three cooled cake rounds on a serving platter or cake stand.
  • Spread a layer of buttercream between each layer and frost the top and sides with the remaining buttercream.
  • Pour the cooled ganache over the top, allowing it to drip down the sides. Garnish with Andes mints.

Notes

Ensure cakes are fully cooled before frosting to prevent the buttercream from melting. Store leftover cake in an airtight container for up to three days.
