For the Cream Filling

  • 8 oz Cream Cheese (softened) Brings an indulgent texture.
  • 1/2 cup Powdered Sugar Adds sweetness without grittiness.
  • 8 oz Whipped Topping (like Cool Whip, thawed) Adds fluffiness to the cream filling.

For Garnish

  • 1/2 cup Toasted Coconut Flakes Provides tropical crunch.
  • To Taste Additional Whipped Cream (optional, for garnish) Adds creaminess and elegance.

Instructions
 

Preparation

  • Preheat your oven to the temperature specified on the cake mix box.
  • Prepare the yellow cake mix according to package instructions and divide the batter between two 9-inch round pans.
  • Bake until golden brown and a toothpick inserted in the center comes out clean.
  • Allow the cakes to cool in the pans for about 10-15 minutes, then transfer to wire racks to cool completely.

Assembly

  • Once cooled, carefully slice each cake in half horizontally to create four layers.
  • In a medium saucepan, combine the crushed pineapple, granulated sugar, and cornstarch; stir constantly over medium heat until thickened. Allow to cool.
  • In a mixing bowl, beat the softened cream cheese and powdered sugar until smooth, then gently fold in the thawed whipped topping.
  • On a cake plate, layer: one cake layer, spread cream mixture, drizzle pineapple filling; repeat until all layers are stacked, finishing with pineapple filling on top.
  • Cover the sides with remaining cream mixture and sprinkle toasted coconut flakes on top.

Chill and Serve

  • Refrigerate the cake for at least 2 hours before serving to allow flavors to meld.

Notes
