Preparation

  • In a large pot over medium heat, melt the butter until it’s bubbly and fragrant.
  • Add the chopped onion and sauté until translucent.
  • Toss in the diced potatoes and pour in the chicken broth, bringing the mixture to a gentle boil.
  • Once boiling, reduce the heat and let it simmer until the potatoes are tender, about 15-20 minutes.
  • Mash some of the potatoes against the sides of the pot with a potato masher or fork.
  • Stir in the heavy cream and season generously with salt and pepper.
  • Serve hot in bowls, topped with shredded cheddar cheese and a sprinkle of green onions.

Notes

Choose waxy potatoes for creaminess. Ensure onion is sautéed until translucent. Don’t rush simmering; allow potatoes to fully soften.
