Instructions
 

Preparation

  • Chill your baking sheets in the refrigerator for about 20–30 minutes.
  • Line the chilled baking sheets with parchment paper.
  • In a mixing bowl, beat the softened butter until creamy. Gradually add granulated sugar, beating until fluffy.
  • Stir in the egg and vanilla extract until smooth.
  • Mix in the flour, cocoa powder, and salt until a thick dough forms.
  • Warm the milk and dissolve the espresso powder within it, then add to the dough and mix until creamy.
  • Using a piping bag, pipe the cookie dough onto the baking sheets in desired shapes.
  • Sprinkle optional toppings on the piped dough if desired.
  • Chill the piped cookies for another 20–30 minutes.

Baking

  • Preheat oven to 350°F (177°C).
  • Bake cookies for 12–15 minutes or until edges are set.
  • Allow to cool on baking sheets before transferring to a wire rack.

Finishing Touches

  • Melt the chopped semi-sweet chocolate and dip the edges of the cookies.
