Instructions
 

Preparation

  • Preheat the oven to 350°F. Lightly spray a 9x9 baking dish with cooking spray.
  • Melt the butter in a medium saucepan over medium heat, then stir in dark chocolate chips and almond or vanilla extract.
  • Once the mixture cools slightly, mix in granulated and brown sugar until smooth.
  • Whisk in eggs one at a time, ensuring each is fully incorporated.
  • Gently fold in flour and cocoa powder until just combined, then add chopped pistachios.

Baking

  • Pour the brownie batter into the prepared baking dish and spread evenly.
  • Bake in the preheated oven for 20-22 minutes until edges are firm and center remains fudgy.

Ganache Preparation

  • While brownies cool, combine white chocolate chips, heavy cream, and a pinch of salt in a saucepan or microwave until creamy and melted.
  • Spread the ganache generously over the cooled brownies.
  • Sprinkle additional roasted pistachios on top for garnish.
