For the crust

  • 2 large eggs, at room temperature Provide structure.
  • 1 large egg yolk, at room temperature Adds creaminess.
  • 3/4 cup pistachio paste Imparts a deep flavor and color.
  • 1 teaspoon vanilla extract Enhances overall flavor.
  • 1 teaspoon almond extract Offers a subtle nutty flavor.
  • 1/2 cup heavy cream Creates a velvety smooth texture.

For the topping

  • 4 tablespoons pistachio cream Enhances the pistachio goodness.
  • 2 tablespoons chopped pistachios Adds visual appeal and crunch.

Instructions
 

Preparation

  • Preheat the oven to 350°F (180°C).
  • Pulse the pistachios in a food processor until coarsely chopped.
  • Add graham cracker crumbs, sugar, and salt to the processor and blend until combined.
  • Mix in ¾ of the melted butter and pulse until it resembles wet sand.
  • Press the crust mixture into the bottom of a springform pan.
  • Bake for 10 minutes, then let it cool.
  • Reduce oven temperature to 325°F (170°C) for a gentler bake.
  • Wrap the springform pan in foil.

Baking the Cheesecake

  • In a bowl, combine cream cheese, sugar, and cornstarch and beat until smooth.
  • Add eggs, yolk, vanilla, almond extract, and pistachio paste, mixing until just combined.
  • Stir in heavy cream gently.
  • Pour the cheesecake batter over the cooled crust in a roasting dish filled with hot water.
  • Bake for 45 minutes or until the edges are set but the center is slightly wobbly.
  • Turn off the oven, crack the door open slightly, and allow the cheesecake to cool for 1 hour.
  • Chill in the refrigerator for at least 4 hours or overnight.

Finishing Touches

  • Remove from the pan, spread pistachio cream on top, and sprinkle with chopped pistachios.

Notes

Ensure all ingredients are at room temperature to avoid lumps. Use a water bath to help bake evenly and prevent cracks. Don't rush the chilling process; patience is key!
