Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large bowl, cream together the unsalted butter and cream cheese until fluffy, about two minutes.
  • Gradually mix in the granulated sugar, and then add the egg and vanilla extract.
  • In a separate bowl, whisk together the all-purpose flour, cornstarch, baking powder, and salt.
  • Gradually add the dry ingredients to the wet mixture, stirring until a soft dough forms.
  • Wrap the dough in plastic wrap and chill in the refrigerator for at least 1 hour.

Baking

  • Once chilled, scoop tablespoons of dough onto the prepared baking sheet.
  • Bake for 10-12 minutes or until the edges are lightly golden.
  • Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Frosting and Decorating

  • For the frosting, beat the softened butter until creamy and gradually add the powdered sugar.
  • Add the heavy whipping cream and vanilla extract, beating until fluffy and smooth.
  • Once the cookies are completely cooled, frost them generously and decorate with sanding sugar, chocolate chips for eyes, and sprinkles for noses and cheeks.
