For the Chicken Filling

  • 6-7 pieces boneless, skinless chicken thighs Tender meat that’s easy to shred and full of flavor.

  • ½ tbsp sofrito (optional) Enriches the taco filling.
  • 1 cup chicken broth Keeps the chicken moist.
  • 1 tsp garlic powder Adds aromatic punch.
  • 1.5 tsp chili powder For warm, earthy flavor.
  • ¼ tsp cayenne pepper Adds heat, adjustable to taste.
  • 1 tsp smoked paprika Brings depth and smokiness.
  • 1.5 tsp adobo seasoning Enhances overall flavor.

For Serving

  • 8-10 pieces flour tortillas Ideal for holding the fillings.
  • 16 oz shredded mozzarella cheese Creamy and melty.

Preparation

  • In a large mixing bowl, combine chicken thighs, bell peppers, and red onion. Add canola oil and spices; toss to coat.
  • Heat canola oil in a skillet over medium heat. Sear chicken thighs for 4-5 minutes per side until golden brown and cooked through. Shred chicken.
  • Sauté bell peppers and onion in the same skillet until tender.
  • Add diced tomatoes and sofrito (if using) to the skillet. Stir in chicken broth and simmer for 5 minutes.
  • Mix shredded chicken back into the skillet and simmer for 15-20 minutes.
  • Press tortillas into sauce for extra flavor, then briefly char in a separate skillet.
  • Assemble tacos with chicken, sautéed veggies, and mozzarella cheese. Cook until cheese melts and tortilla crisps.

Notes

For healthier alternatives, use turkey or chicken breast. Corn tortillas or lettuce wraps are great low-carb options. Add extras like black beans or corn for additional protein. Don't overload the tortillas for easier handling.
