Macaron Shell Ingredients

  • 70 grams almond meal/flour Provides a nutty flavor and lovely texture.
  • 120 grams powdered sugar Gives the macarons their sweetness and a smooth finish.
  • 2 large egg whites Essential for achieving the perfect meringue structure.
  • 50 grams granulated sugar Adds stability and sweetness to the meringue.
  • 1/4 cup freeze-dried raspberries For an intense raspberry flavor and beautiful color.

Buttercream Filling Ingredients

  • 3/4 cup fresh or frozen raspberries Offers a luscious filling that complements the shells.
  • 2 tablespoons granulated sugar Sweetens the buttercream to delicious perfection.
  • 1 tablespoon lemon juice Adds a bright acidity that balances the flavors.
  • 6 tablespoons unsalted butter Creates a creamy, rich filling that binds the flavors together.

Instructions
 

Preparation

  • Line a baking sheet with parchment paper.
  • In a food processor, combine almond meal and powdered sugar. Pulse until finely ground and sift into a bowl.
  • In a clean mixing bowl, whip the egg whites until foamy. Gradually add granulated sugar while beating until stiff peaks form.
  • Gently fold the almond mixture into the whipped egg whites until smooth.
  • Pipe round shapes onto the prepared baking sheet and let them rest for about 30 minutes.

Baking

  • Preheat your oven to 300°F (150°C). Bake the macarons for around 15 minutes.

Buttercream Filling

  • Simmer raspberries, granulated sugar, and lemon juice until softened. Strain the mixture to remove seeds and cool.
  • Beat unsalted butter in a large bowl until light and fluffy. Gradually mix in the cooled raspberry syrup.
  • Pipe the raspberry buttercream between two macaron shells.

Notes

Ensure your baking tools are clean. Use a scale for accurate measurements. Allow macarons to rest after piping for better texture.
