For the Potatoes

  • 4 large russet potatoes These starchy gems form the perfect base, their skins crisp up beautifully while the insides become fluffy.

For the Filling

  • 1 cup cooked corned beef, chopped Tender, rich, and infused with aromatic spices.
  • 1/2 cup sauerkraut, drained Provides a tangy crunch, balancing the richness of cheese and beef.
  • 1 cup shredded Swiss cheese, divided Adds a nutty flavor that envelops every bite.
  • 1/4 cup cream cheese, softened Ensures the filling remains rich and luscious.
  • 1/4 cup sour cream Adds a touch of tartness.
  • 2 tablespoons butter Infuses a savory richness.
  • 1 tablespoon Dijon mustard Adds a slight kick to the flavor.
  • 1/2 teaspoon garlic powder Brings warmth to the dish.
  • 1/2 teaspoon salt Essential for bringing out all flavors.

Instructions
 

Preparation

  • Preheat the oven to 400°F (200°C).
  • Scrub the russet potatoes clean under running water and prick each potato several times with a fork.
  • Place the pricked potatoes directly on the oven rack and bake for 50–60 minutes until tender.
  • After removing the potatoes from the oven, let them cool slightly and slice them in half lengthwise.
  • Carefully scoop out the insides, leaving about a quarter-inch of potato along the skin.

Filling Preparation

  • In a mixing bowl, combine the scooped-out potato with butter, cream cheese, sour cream, Dijon mustard, garlic powder, salt, and black pepper. Mash until smooth.
  • Fold in the chopped corned beef, sauerkraut, and half of the shredded Swiss cheese.
  • Spoon the filling back into the potato skins generously and sprinkle the remaining Swiss cheese on top.

Baking

  • Return them to the oven and bake for another 15 minutes, until the cheese is melted and golden brown.
  • Garnish with chopped green onions before serving warm.

Notes

For a lighter version, swap corned beef for shredded grilled chicken or turkey. Use Greek yogurt in place of sour cream. Avoid overfilling and ensure potatoes are fully tender before serving.
