Seasoning

  • 3 tablespoons olive oil For a rich, aromatic foundation.

Garnish

  • fresh herbs (such as parsley or chives) Vibrant garnishes that add color and freshness.

Instructions
 

Preparation

  • Preheat your oven to 425°F (220°C).
  • Wash and cut the potatoes into wedges or cubes.
  • In a large mixing bowl, toss the potatoes with olive oil, salt, and pepper.
  • Spread the potatoes out on a baking sheet in a single layer.

Cooking

  • Roast in the preheated oven for 25-30 minutes, turning halfway through.
  • While the potatoes are roasting, heat the heavy cream over low heat in a small saucepan.
  • Add the goat cheese to the warm cream and stir until melted and smooth.
  • Remove from heat and stir in the lemon juice.

Serving

  • Once the potatoes are done, transfer them to a serving dish and drizzle the melted goat cheese dressing over the top.
  • Garnish with fresh herbs before serving.

Notes

For best results, ensure the potatoes are uniform in size for even cooking. Don’t overcrowd the baking sheet to avoid steaming.
