  • 1 large egg, beaten (for coating) Adds richness to croquettes.
  • 1/2 cup panko breadcrumbs Creates a light, crunchy coating.
  • Vegetable, corn, or canola oil (for frying) For achieving golden-brown finish.

Instructions
 

Preparation

  • In a large bowl, gently mix the flaked salmon, eggs, diced onion, minced garlic, flour, sliced scallions, chopped parsley, lemon zest, hot sauce, kosher salt, black pepper, and Cajun seasoning until just combined.
  • Preheat your oven by lightly greasing a baking sheet with cooking spray or lining it with parchment paper.
  • Using your hands, scoop 2 to 3 tablespoons of the salmon mixture and shape it into an oval croquette.
  • Lightly dip the formed croquette into the beaten egg until it is completely coated.
  • Roll the croquette in panko breadcrumbs.
  • Place the coated croquettes on the baking sheet and repeat this process with the remaining mixture.

Cooking

  • In a large deep skillet or Dutch oven, heat about 2 inches of oil until it reaches around 350 degrees.
  • Working in batches, gently place croquettes into the hot oil and fry until they are golden brown, about 3-5 minutes.
  • Once they’re perfect, transfer the croquettes to a paper towel-lined plate and sprinkle them with kosher salt.
  • Serve warm for the ultimate indulgence!

Notes

For optimal results, use chilled ingredients and fry in batches. Allow oil to reach the right temperature for perfect crispiness.
