Instructions
 

Preparation

  • Rinse the scallops under cold water and pat them dry with a paper towel. Season with salt and black pepper.
  • In a large skillet, heat the olive oil over medium-high heat until shimmering. Add the butter and let it melt.

Cooking Scallops

  • Carefully place the scallops in the pan, leaving space between each one. Sear for about 2–3 minutes until golden brown.
  • Flip the scallops and cook for another 2 minutes until they are cooked through. Remove the scallops from the skillet and set aside.

Making the Sauce

  • In the same pan, lower the heat and add the minced garlic and chopped shallot. Sauté for 1–2 minutes until fragrant.
  • Stir in the Cajun seasoning, smoked paprika, and optional red pepper flakes. Toast the spices for a minute.
  • Slowly add the heavy cream and broth, stirring to combine. Let it simmer for 3–5 minutes until slightly thickened.
  • Stir in the grated Parmesan cheese until melted, then add the lemon juice.

Final Assembly

  • Return the scallops to the sauce, gently spooning the sauce over them.
  • Garnish with chopped parsley before serving.

Notes

Ensure scallops are dried thoroughly for the best sear. Use fresh ingredients for maximum flavor. Adjust seasoning to personal preference.
