  • 2 tbsp Worcestershire sauce Enriches the overall flavor profile.

  • 1 tbsp apple cider vinegar Brightens up the dish.

For the cornbread topping

  • 1 box (8.5 oz) cornbread mix A simple way to create a fluffy topping.
  • 1 large egg Helps bind the cornbread batter.
  • 1/3 cup milk Adds moisture to the cornbread.
  • 2 tbsp melted butter Makes the batter more decadent.
  • 1 cup shredded cheddar cheese Adds creamy, melty goodness.
  • 1/4 cup corn kernels (optional) Adds texture.
  • 2 tbsp fresh chives, chopped Provides pop of color and fresh flavor.

For serving

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C). Grease a 9"x13" baking dish.
  • In a large skillet over medium-high heat, brown the ground beef for about 6-8 minutes until fully browned.
  • Add the diced onion and bell pepper; sauté for 5 minutes until softened. Stir in the minced garlic and cook for another minute.
  • Stir in the tomato sauce, ketchup, brown sugar, Worcestershire sauce, mustard, apple cider vinegar, chili powder, and smoked paprika, and simmer for about 10 minutes.
  • Spread the Sloppy Joe mixture evenly in the prepared baking dish.

Cornbread Topping

  • In a bowl, whisk together the cornbread mix, egg, milk, and melted butter. Fold in the shredded cheddar cheese and corn (if using).
  • Dollop the cornbread batter over the Sloppy Joe mixture and spread it evenly.

Baking

  • Bake for 20-25 minutes until the cornbread topping is golden brown.
  • Let cool for 10 minutes before serving.

Notes

Ensure the beef is well-browned for richer flavor. Don’t skip the simmering step for depth. Avoid overmixing the cornbread to maintain its light texture. Serving with pickled jalapeños adds a zesty note.
