Preparation

  • Whisk together the flour, baking powder, and salt in a medium bowl.
  • In a large bowl, cream together the softened butter and granulated sugar until light and creamy.
  • Add the egg, vanilla extract, and almond extract, mixing until well combined.
  • Gradually mix the dry ingredients into the wet mixture until a dough forms.
  • If the dough is too sticky, add more flour until the desired consistency is achieved.
  • Divide the dough into two halves, roll out to about 1/4 inch thickness, and wrap each half in plastic wrap.
  • Chill the dough in the refrigerator for at least 2 hours.

Baking

  • Preheat your oven to 350°F (177°C) and line baking sheets with parchment paper.
  • Once chilled, cut out shapes using cookie cutters and place them on the prepared baking sheets.
  • Bake for 11-12 minutes, or until the edges are lightly golden.
  • Allow the cookies to cool on sheets for 5 minutes before transferring them to a wire rack to cool completely.

Decoration

  • Once cool, decorate with royal icing, glaze, or buttercream, and add assorted sprinkles.

Notes

For best results, ensure butter is at room temperature, and do not skip the chilling step to prevent excessive spreading. Store cookies at room temperature for up to 5 days.
