Instructions
 

Preparation

  • In a large bowl, whisk together the flour, sugar, baking powder, and salt until well combined.
  • In another bowl, mix the milk, egg, melted butter, and vanilla extract. Whisk until smooth.
  • Pour the wet mixture into the dry ingredients, stirring gently until just combined.
  • Heat a non-stick skillet over medium heat and lightly grease it with cooking spray or a little butter.

Cooking

  • Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown.
  • Immediately sprinkle pancakes with cinnamon sugar after removing from the skillet.
  • Repeat with remaining batter, adding more cinnamon sugar as needed.

Serving

  • Stack pancakes on a plate and serve warm, optionally drizzled with maple syrup or topped with whipped cream.

Notes
