For the chicken

For the vegetables

  • 1 large cucumber, halved lengthwise and sliced into half-moons Crisp and refreshing.

Instructions
 

Preparation

  • Whisk together the soy sauce, rice vinegar, honey or maple syrup, sriracha, sesame oil, minced garlic, and grated ginger to create the glaze.
  • Heat 1 tablespoon of vegetable oil in a skillet over medium-high heat.
  • Add the chicken pieces, season with salt and pepper, and stir-fry for 6-8 minutes until golden brown and cooked through.
  • Pour the glaze over the chicken, stirring to coat evenly, and simmer for 2-3 minutes until the sauce thickens.
  • Remove the chicken from the skillet, and heat the remaining tablespoon of oil.
  • Add the sliced cucumber and scallions to the skillet, stir-frying for 2-3 minutes until tender but still crunchy.
  • Return the chicken to the skillet, mix with the vegetables, and heat through for about 1 minute.
  • Serve hot over cooked rice, garnished with sesame seeds if desired.

Notes

For added flavor, let the chicken marinate for an hour or more before cooking. Adjust the glaze based on heat preference.
