Preparation

  • Preheat your oven to 400°F (about 204°C). Bake whole sweet potatoes for 45-50 minutes until they’re fork-tender. Allow to cool before peeling and mashing until you have about 1⅓ cups.
  • Drain the canned tuna using a fine-mesh strainer, ensuring it’s free from excess moisture.
  • Thinly slice the scallions, mince the cilantro, and chop the jalapeño.
  • In a mixing bowl, combine the mashed sweet potato, beaten eggs, and 1 tablespoon of ghee. Stir until smooth.
  • Gently fold in the drained tuna, scallions, cilantro, jalapeño, lemon zest, and red pepper flakes. Season generously with salt and pepper.
  • Divide the mixture into 8 portions and form into patties. Chill in the refrigerator for about 10 minutes.

Cooking

  • Heat the remaining ghee in a skillet over medium heat. Carefully place the patties in the skillet, cooking for 4-5 minutes on each side until golden brown.
  • Serve warm with lemon wedges on the side.

Notes

For the best texture, cool sweet potatoes before mashing, and avoid over-mixing to prevent dense cakes. Chill patties to maintain shape while cooking.
