  • 4 cloves garlic, pressed or minced Extra aromatic punch.
  • 12 ounces baby spinach, preferably organic Adds nutrients and color.

For Assembly

  • 9 no-boil lasagna noodles Convenient for quick preparation.
  • 8 ounces (2 cups) freshly grated low-moisture, part-skim mozzarella cheese Main topping for the dish.

Instructions
 

Preparation

  • Preheat your oven to 425°F.
  • Prepare the sauce: Drain the canned diced tomatoes and blend them with chopped basil, olive oil, pressed garlic, fine salt, and red pepper flakes until smooth.
  • Make the spinach mixture: Heat olive oil in a skillet, add onions and salt, and sauté until translucent. Add garlic and cook for another minute, then fold in fresh spinach and sauté until wilted.
  • Blend the cottage cheese with fresh black pepper until smooth; combine with sautéed spinach.

Assembly

  • Layer your lasagna in a 9x13-inch baking dish, starting with sauce, then three noodles, half of the spinach mixture, more sauce, and mozzarella cheese. Repeat the layers ending with noodles, sauce, and mozzarella on top.
  • Cover the dish with foil and bake for 18 minutes. Remove foil and bake for an additional 12-17 minutes until bubbly and golden.
  • Allow to cool for about 15 minutes before serving. Garnish with fresh basil.

Notes

Use fresh ingredients for the best flavor. Letting the lasagna rest after baking helps the layers set.
