  • 1 standing rib roast 1 standing rib roast (about 1/2 lb. per person) Choose a high-quality cut for best flavor.
  • 1 Tbsp 1 Tbsp. kosher salt Generous seasoning enhances flavor.
  • 2 tsp 2 tsp. black pepper Adds a warm, earthy spice.
  • 1 bunch 1 bunch fresh rosemary, divided Half for seasoning and half for garnishing.

Preparation

  • Remove the rib roast from its packaging and place it in a large roasting pan. Allow it to come to room temperature for about 30 minutes.

Seasoning

  • Preheat your oven to 450°F. Season all sides of the rib roast with kosher salt and black pepper, then scatter half of the fresh rosemary around the bottom of the pan.

Roasting

  • Place the roast in the preheated oven and roast for 30 minutes at 450°F to develop a crust.
  • Reduce the oven temperature to 350°F and continue roasting until the internal temperature reaches 110°F for medium-rare, approximately 90 minutes.

Resting

  • Remove the roast from the oven and cover loosely with aluminum foil. Allow it to rest for 30 minutes.

Serving

  • Slice along the ribs to remove individual ribs and then slice the remaining roast against the grain. Serve garnished with the remaining rosemary.

Notes

Allow the roast to sit at room temperature prior to cooking for even heat distribution. Using a meat thermometer ensures perfect doneness, especially for specific levels like medium-rare.
