For the pudding

  • 1 2/3 cups all-purpose flour Provides structure.
  • 1 1/2 tsp baking powder Helps the pudding rise.

  • 1/4 tsp salt Balances sweetness.

For the toffee sauce

  • 1/2 cup heavy cream For the luscious sauce.
  • 1/2 cup butter Provides richness.
  • 3/4 cup packed light brown sugar Makes it beautifully caramelized.
  • pinch salt Enhances sweet notes.
  • 2 tsp vanilla extract Adds warmth.

Optional garnish

  • to taste Chopped walnuts For added crunch.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and grease a 9x13-inch pan.
  • Soak the chopped dates in boiling water for about 10 minutes.
  • In a mixing bowl, beat butter and light brown sugar until light and fluffy.
  • Mix in eggs one at a time, followed by vanilla extract and molasses.
  • Combine flour, baking powder, baking soda, and salt in another bowl.
  • Mash soaked dates into a chunky puree.
  • Alternately add dry ingredients and date mixture to the butter mixture, folding gently.

Cooking

  • Pour the batter into the prepared pan and spread evenly.
  • Bake for 30-35 minutes until a toothpick comes out clean.
  • Prepare the toffee sauce by heating cream, butter, brown sugar, and salt in a saucepan until bubbly.
  • Remove from heat and stir in vanilla extract.

Serving

  • Allow pudding to cool for a few minutes before serving.
  • Drizzle warm toffee sauce over each slice and sprinkle with walnuts if desired.

Notes
