Ingredients
  

Strawberry Sauce

  • 1.5 cups fresh or frozen strawberries, hulled Bursting with natural sweetness.

Crust

  • 0.33 cups granulated sugar Adds sweetness to the crust.
  • 0.5 cups unsalted butter, melted Lends richness to the cheesecake crust.

Filling

  • 24 ounces cream cheese, softened The creamy foundation of our filling.
  • 1 cup granulated sugar Ensures a sweet balance to the cheesecake.
  • 3 large eggs Adds structure and richness.
  • 1 teaspoon vanilla extract Imparts a warm, aromatic flavor.
  • 1 cup sour cream Contributes a tangy richness.
  • 0.25 cups heavy cream For a silky finish.

Instructions
 

Make the Strawberry Sauce

  • In a medium saucepan over medium heat, combine hulled strawberries, granulated sugar, and lemon juice. Cook for 5-7 minutes until strawberries break down and release juices.
  • Mash or puree the mixture for desired consistency. Once thickened, add cornstarch slurry, mix well, and remove from heat to cool.

Prepare the Crust

  • Preheat your oven to 325°F (160°C).
  • In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Press into the bottom of a 9-inch springform pan.
  • Bake the crust for 8-10 minutes and allow it to cool completely.

Create the Filling

  • In a large mixing bowl, beat softened cream cheese and granulated sugar until smooth and creamy.
  • Add eggs one at a time, mixing well after each addition. Stir in vanilla, sour cream, and heavy cream until combined.

Assemble the Cheesecake

  • Pour the creamy filling over the cooled crust and spread evenly.
  • Drizzle cooled strawberry sauce over the top and swirl it into the filling.

Bake

  • Place the springform pan inside a larger baking dish. Pour hot water into the outer pan until it reaches halfway up the sides of the springform pan.
  • Bake for 55-65 minutes, until edges are set and center remains slightly jiggly.

Cool and Chill

  • Turn off the oven and leave the cheesecake inside with the door slightly ajar for 1 hour to cool.
  • Transfer to the refrigerator and chill for at least 6 hours, preferably overnight.

Serve

  • Remove the sides of the springform pan and slice the cheesecake with a sharp knife, wiping it clean between cuts.
  • Top with additional strawberry sauce or fresh strawberries if desired.

Notes

For best results, always use room temperature ingredients. Do not skip the water bath to prevent cracks, and be patient in allowing the cheesecake to cool and set properly.
