Dressing

  • 1/4 cup lime juice Provides refreshing acidity.
  • 2 tbsp olive oil Offers depth and smoothness.

Instructions
 

Preparation

  • Cook the pasta according to the package instructions until al dente, then drain and let cool completely.
  • In a large bowl, combine the sweet corn, diced red bell pepper, and diced red onion.
  • Add the cooled pasta to the vegetable mixture and stir gently to combine.
  • In a separate bowl, whisk together the lime juice, olive oil, chili powder, and a pinch of salt and pepper until well blended.
  • Pour the dressing over the salad and toss gently to coat. Fold in the crumbled feta cheese.
  • Cover the bowl with plastic wrap and refrigerate for at least 30 minutes before serving.

Notes

For best flavor, allow the salad to chill for at least 30 minutes before serving. This salad is great for meal prep and can be stored in an airtight container in the fridge for up to 3 days.
