Instructions
 

Preparation

  • Trim excess fat from the chuck roast and season generously with salt and pepper.
  • Heat a skillet over medium-high heat and sear the roast for about 5 minutes on each side until a golden-brown crust forms.
  • In the same skillet, sauté sliced onions until translucent, then add minced garlic and sauté until fragrant.

Cooking

  • In a bowl, whisk together brown sugar, soy sauce, apple cider vinegar, ground cumin, paprika, and beef broth. Pour this mixture over the seared roast in a slow cooker, making sure the beef is well-coated.
  • Cover and cook on low for 8 hours or on high for about 4 hours until tender.

Finishing

  • Shred the beef using two forks, letting it soak in the cooking liquid before serving.

Notes

For a healthier option, use lean beef like sirloin. You can also add vegetables such as carrots or bell peppers.
