For the Corn Ribs

  • 2 cobs fresh corn cobs These golden gems are naturally sweet and juicy.
  • 1 tablespoon smoked paprika Adds a warm, smoky flavor.
  • 1 tablespoon olive oil Enhances the corn’s natural sweetness.
  • Pinch salt Essential seasoning.
  • Pinch black pepper Essential seasoning.
  • Pinch dried thyme Adds an earthy note.

For the Dressing

  • ½ one red onion, finely diced Brings a sharp, aromatic bite.
  • ½ one red chili, finely chopped Adjust to taste for desired heat.
  • Juice of ½ lime lime juice Adds tangy brightness.
  • 3 tablespoons olive oil (for dressing) Creates a flavorful dressing.
  • Handful fresh parsley and basil, chopped Adds freshness and color.

Instructions
 

Preparation

  • Preheat your oven to 200ºC (fan) for an even bake and crispy edges.
  • Slice each corn cob into four lengthwise strips. Use caution while cutting.
  • Place the corn strips on a baking tray, ensuring they lay flat. Brush with olive oil and season with smoked paprika, salt, pepper, and thyme. Toss gently.

Cooking

  • Bake the corn for 25 minutes, flipping halfway through.
  • After the initial bake, check the corn and bake for an additional 18-20 minutes until golden and crispy.
  • In a separate bowl, mix red onion, chili, lime juice, olive oil, salt, pepper, parsley, and basil for the dressing. Stir well.
  • Drizzle the dressing over the baked corn strips or serve it on the side.

Notes

For best flavor, use fresh corn. Don't overcrowd the baking tray to avoid steaming. Adjust seasoning and spice to taste.
