Preparation

  • In a large pot over medium-high heat, cook the ground beef, onion, and garlic until the beef is browned.
  • Add the water, diced tomatoes, and taco seasoning. Bring to a boil for a few minutes.
  • Stir in the broken spaghetti, reduce the heat, and cover the pot. Let it simmer for 12-14 minutes.
  • Remove from heat and add the Velveeta cheese, shredded cheddar, and chopped cilantro. Stir until melted.
  • Serve in bowls, topped with extra cilantro and a dollop of sour cream or Mexican crema, if desired.
