Instructions
 

Preparation

  • Stir in the minced garlic, cooking for about a minute until fragrant.
  • Pour in the enchilada sauce along with the black beans, corn, and pickled jalapeños. Bring the mixture to a boil, allowing it to thicken slightly before removing it from heat.

Assembly

  • In a greased baking dish, start layering your casserole. Begin with a layer of zucchini slices at the bottom, followed by a generous portion of the turkey mixture, and then a sprinkle of the shredded cheese. Repeat these layers until you run out of ingredients, finishing with a layer of cheese on top.

Baking

  • Bake the casserole in the preheated oven for approximately 30 minutes or until it is bubbly and the cheese has melted beautifully.
