  • 1 tablespoon fresh orange zest Adds a refreshing citrus note.
  • 1 bag (10 oz) mixed frozen berries, thawed and drained The star ingredient, bursting with sweetness.

Preparation

  • Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish with vegan butter.
  • Layer the cubed bread in the baking dish evenly.
  • In a mixing bowl, whisk together Just Egg, plant-based milk, vanilla extract, brown sugar, and orange zest until smooth.
  • Pour the custard over the bread cubes and gently press down to soak all the bread.
  • Scatter the thawed berries on top and let it rest for 15 minutes.
  • Dot with vegan butter and bake for 35-40 minutes until golden brown.
  • Cool slightly before serving with powdered sugar or maple syrup.

Notes

This casserole can be prepared the night before for enriched flavors. Serve warm with sides like vegan yogurt or fruit salad.
