Instructions
 

Preparation

  • Whisk together the flour, cornstarch, baking powder, and salt in a large bowl.
  • In a stand mixer, cream together the vegan butter and sugar until fluffy.
  • Add the non-dairy milk, vanilla, and almond extract, mixing well.
  • Gradually add the dry ingredients to the wet mixture and mix until combined, but do not overmix.
  • Chill the dough by dividing it and wrapping in plastic wrap for 2-3 hours.

Baking

  • Preheat the oven to 350°F and line baking sheets with parchment paper.
  • Roll out the chilled dough on a floured surface, cut into shapes, and place on baking sheets.
  • Bake for 8-10 minutes until slightly puffed and just golden around the edges.
  • Let them cool on wire racks.

Icing

  • Whisk together powdered sugar, non-dairy milk, corn syrup, and vanilla until smooth.
  • Adjust consistency as needed for drizzling or spreading.

Notes
