For the Frosting

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Grease and flour your cake pans.
  • In a large mixing bowl, whisk together flour, baking powder, and salt.
  • In a separate bowl, cream the softened butter and granulated sugar until fluffy.
  • Add egg whites one at a time, mixing each in fully before adding the next.
  • Stir in vanilla extract.
  • Gradually mix dry ingredients into wet ingredients, alternating with milk.
  • Fold in melted white chocolate.
  • Divide the batter between prepared pans and smooth the tops.
  • Bake for 25-30 minutes or until a toothpick comes out clean.
  • Cool in pans for 10 minutes, then transfer to wire racks to cool completely.

Frosting

  • Combine sugar, butter, evaporated milk, and egg yolks in a saucepan.
  • Cook over medium heat, stirring until thickened.
  • Remove from heat and stir in vanilla, coconut, and pecans.

Assembly

  • Once cakes are cool, spread frosting generously between layers and on top.

Notes

Ensure room temperature ingredients for better mixing. Don't overmix to maintain a tender cake.
