Preparation

  • Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  • In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  • In a large bowl, combine the sugar and melted butter and mix until well combined.
  • Add the eggs one at a time, followed by the vanilla extract.
  • Gently fold in the grated cucumber and yogurt into the wet mixture.
  • Carefully fold the dry ingredients into the wet mixture until just combined. Add lemon zest if using.
  • Spoon the batter evenly into each muffin cup, filling them about three-quarters full.

Baking

  • Bake for about 18-20 minutes or until a toothpick inserted into the center comes out clean.
