For the Cupcakes

For the Brain Frosting

Instructions
 

Preparation

  • Preheat your oven to 350 degrees F (175 degrees C). Line a standard 12-cup muffin tin with cupcake liners.
  • In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  • Add the buttermilk, oil, beaten egg, and vanilla extract; whisk until smooth.
  • Pour in the boiling water and mix thoroughly.
  • Fill each cupcake cavity 2/3 full with batter.

Baking

  • Bake for 18 to 20 minutes, or until a toothpick inserted in the center comes out clean.
  • Let the cupcakes cool completely in the pan for about 1 hour.

Frosting

  • In a separate bowl, beat together powdered sugar, butter, vanilla extract, and salt until smooth and creamy.
  • Add neon green food coloring until desired shade is achieved.
  • Pipe a small mound of frosting on top of each cooled cupcake.
  • Create brain-like texture with piping, then drizzle red decorating gel on top.

Notes

Use room temperature ingredients for better mixing. Sift dry ingredients to remove lumps, and do not overmix the batter.
