Preparation

  • Wash and slice zucchini into thin strips and sprinkle with salt; let sit for 10-15 minutes to draw out moisture. Pat dry with a paper towel.

Cook the Turkey Mixture

  • In a skillet, heat olive oil over medium heat. Add diced onion and minced garlic, sautéing until fragrant and translucent.
  • Add cooked ground turkey to the skillet, browning it with onions and garlic. Stir in marinara sauce and let simmer for about 5 minutes.

Layer the Ingredients

  • In a baking dish, layer the turkey mixture, followed by zucchini strips, ricotta cheese, and mozzarella. Repeat until all ingredients are used, finishing with mozzarella and Parmesan on top.

Bake the Lasagna

  • Preheat oven to 375°F (190°C). Cover dish with foil and bake for 30 minutes.
  • Remove foil and bake for an additional 10-15 minutes, until cheese is golden and bubbly. Let lasagna rest for 10 minutes before serving.

Notes

Always use fresh zucchini for best results. Salting zucchini prevents soggy lasagna. Allow resting time after baking for better serving.
